DIY Wedding Cupcakes – Carrot Cupcake Recipe

In this project I’m going to show you how to make carrot cupcakes. I’ve chosen this flavour of cake not only because it’s one of my favourites, it’s also because you can make carrot cakes the day before your wedding, as they so moist.

  • 195g of all-purpose flour
  • 155g sugar
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • Half a teaspoon of cinnamon
  • A pinch of salt
  • 3 eggs
  • 185ml vegetable oil
  • 90ml honey
  • 255g grated carrot

Mix together the eggs, vegetable oil and honey in an electric mixer.

adding sugar to the mixer when making wedding cupcakes Combine the flour, sugar, baking powder, baking soda, cinnamon and salt and add to the mixer. Stir in until you have a smooth mixture.
grating carrots for carrot cupcakes Grate your carrots and gently fold into the mixture.
cupcake mixture in paper cases Place the mixture into paper cases in a cupcake or muffin tin.
cupcakes being taken out of the oven Bake your cupcakes at 350 degrees F for 20-25 minutes. Remove from the oven and cool your wedding cupcakes on a wire rack.

You Will Need:

  • 175g cream cheese
  • 45g butter
  • 1 teaspoon of vanilla extract
piping frosting on carrot cupcakes In a clean mixer bowl combine the cream cheese and butter until smooth. I used a piping bag to ice my cupcakes but you could also apply the frosting with a knife.

Serving Your DIY Wedding Cupcakes

How many times have you been to a wedding where the cake is cut and people don’t eat it? Well why not serve your wedding cupcakes with the coffee after the meal, that’s what we did at our wedding. We went round the tables with our cupcakes arranged on a silver tray to offer our guests. It gave us a great opportunity to speak to all our guests as they chose their cupcakes. We had three different flavours to suit all tastes! We even created two gluten free DIY wedding cupcakes for our wheat intolerant guests.
